In Hawaii, sweet rolls, spam and eggs are quintessential ingredients to a mighty delicious breakfast. The contrast of sweet Hawaiian rolls with the saltiness of spam makes this the ultimate breakfast sandwich! We kicked up this sandwich with our Barrel-Aged Sriracha and creamy mayonnaise. Be prepared to have a just as awesome day ahead!
Serves 1
Time: 15 minutes prep, 5 minutes cooking
Ingredients:
2 tablespoons of Sosu Barrel Aged Sriracha
2 tablespoons of mayonnaise (we like Hampton Creek's mayonnaise)
2 slices (1/2 inch thick) Spam -- If you don't like spam, you can substitute with pork chops
1 bunch of scallions (sliced thinly length wise)
2 tablespoons of thinly cut chives
1/4 cup of kimchi
Two eggs
4 unseparated King's Hawaiian Dinner Rolls
2 tablespoons of olive oil
Step 1: Prepare the spicy mayo by combining the mayonnaise and Barrel-Aged Sriracha in a small bowl. Mix well.
Step 2: In another bowl filled with ice water, shock the thinly sliced scallions. They should curl up in the water. Remove and pat dry with a paper towel.
Step 3: In a frying pan on medium heat, add 1 tablespoon of olive oil and cook the spam until golden brown on the outside. Remove and drain on a paper towel.
Step 4: In the same pan, add another tablespoon of oil and add the two eggs. Sprinkle the chives on top when the whites are almost cooked thoroughly.
Final Step/ Assembly: Slice the 4 unseparated hawaiian rolls in half to form two slices of bread. Toast until lightly browned. Spread the spicy mayo generously on the bottom half of the rolls and place the spam on top. Top with the eggs, kimchi and scallions.
