I always believe the best tasting dishes are also the simplest. So when I got an email from one of our Sosu fans for a simple Guacamole with Srirachup, I was intrigued to try it. Thanks Kirby Werner for this recipe. I added a few of my own touches, so enjoy! I promise it's simple and amazing!
(Servings for 2, Prep time about 5-7 minutes)
2 medium-soft avocados
1 tbsp of Srirachup
1/2 persian lime
2-3 sprigs of spring/green onion (a.k.a scallions)
Salt & coarse black pepper to season
1. Prep the avocados & green onions. Cut avocado in half. Remove the seed. Using a spoon, spoon out the avocado. Then cut into cubes. Wash the green onions and cut into small pieces.
2. Prep the Srirachup + Lime Sauce. Squeeze out the lime juice and mix with Srirachup. Crack black pepper on top of the sauce.
3. Mix together. Mix the sauce with the avocados and green onions. Crack black pepper on top of the dish.
